Hi guys,
I know this is just a project. But maybe you find this interesting. I’ve stumbled about them (Garcia) and their Alu Cat.

Personally I don’t like it as I don’t see 2 helm stations as in Outremer 5x … But have a look.

Leaving the mainsheet unattended is not a good idea in case of high winds that precede a front. A possible solution is the upsideup mainsheet release mechanism. http://www.oceandatasystem.com/Documents/UpSideUp-version-comparison-EN.pdf
It can be controlled from the inside helm. The mid- and high-end models feature both wind speed and tension release triggers.
You should look at the St. Francis 50.
